According to US Weekly, Eva Longoria gushed about turning 40, in an interview with pal and Extra's Mario Lopez this past April.

"Fourth level. 40! I actually feel better," she told Lopez. "I've never been in better shape in my life. I've never been happier in my life. I love where I'm at emotionally and spiritually, so for me, I'm like so happy."

"I always said that I was like open arms for 40 because I want my 40-year-old mind," she explained. "I want all the experience and everything to help now."

Though she's in Spain for the Global Gift Gala, which raises funds for multiple charities - including her own - Eva has been donning some tiny bikinis during her sun-soaked vacation. According to Livestrong.com, Eva Longoria's diet plan is mostly to cook organic food at home "to avoid overeating or indulging in high-calorie treats, though she does allow herself one cheat day each week."

For breakfast, Eva will eat egg whites and fruit or a serving of sugar-free cereal topped with fresh berries. For lunch, the "Desperate Housewives" alum might consist of grilled chicken breasts paired with spinach and avocado dressed with an olive oil vinaigrette. Dinner might be chicken and brown rice or salmon and grilled asparagus.

Almonds, cottage cheese, vanilla yogurt, cucumber slices, fruit such as bananas and apples or celery spread with nut butter might be her snacks throughout the day.

If she's working on set and too busy to cook at home, Eva will have a food delivery service make her an omelet filled with turkey and vegetables, served with fresh fruit. Her lunch could be sauteed chicken and peppers served with vegetables and a salad. Marinated grilled salmon paired with asparagus and a salad could be dinner, while Longoria's daily snacks could consist of yogurt or apples with cheese slices.

Meanwhile, Eva works out first thing in the morning on every day except Wednesday.She starts with an aerobic exercise to raise her heart rate, "then moves on to fast-paced circuit training for the remainder of her workout," Livestrong.com reports.

For example, she "typically performs a high-cardio exercise like running on a treadmill for about five to 10 minutes before focusing on her legs, arms, abs, chest or back, doing 15 repetitions of each exercise and cycling through each three times."

On Wednesdays, Longoria has fun with different activities, like yoga or kickboxing.
